Moroccan Herbs and Spices - Ras el Hanout

Ras el Hanout, in Arabic, means "top (or head) of the shop", referring to the Moroccan souks, where each merchant offers a house blend of his finest spaces to create this North African spice blend.

Ras el Hanout has no set recipe, and the most complex versions may contain over 50 spices that are toasted before grinding. Typical included are ginger, cumin, cardamom, black pepper, nutmeg, turmeric, allspice, cinnamon, Spanish paprika, cayenne pepper and saffron threads.

During the winter months, the best juice to be found in Marrakech actually comes from mandarins, not oranges. At Marrakech Riad Dar Zaman we order bulk deliveries of mandarins from our local greengrocer, who sources them from a local orchard just outside of Marrakech.

Marrakech Marathon 29th January 2012

Under the High Patronage of his Majesty the King Mohammed VI, the International Marathon of Marrakech announces its twenty third edition on 29th January, 2012.

More than 5 000 marathonians from all over the world will take part in one of the most prestigious Marathons in the world.

The magical town of Marrakesh offers an exceptional setting, a very mild climate in January and a beautiful circuit considered as one of the fastest in the world. The route follows Marrakech streets lined with palm trees, orange, lemon and olive trees, and also the ramparts of the Marrakech medina.

Marrakech Communal Ovens (furan)

When the enticing smell of freshly baked bread curls around your nostrils as you walk around the Marrakech medina, you're probably very close to a furan (communal oven).

Most homes in the medina don't have the luxury of an oven, so bread, cakes and other food requiring baking are taken to the local neighbourhood oven.


For 1.5 dirhams for a small loaf, 3 dirhams for a large loaf, the baker will oversee the cooking of each item and store it awaiting collection. Often the job of delivering and collecting the bread and cakes is given to the children.


Our Marrakech Riad is supplied with hot, fresh bread daily from our local communal oven in Sidi Ben Slimane, located right at the end of our street.

Christmas and New Year's Eve in Marrakech

Marrakech Riad Cooking Class

We offer cooking classes at our Marrakech Riad. Complimentary with a minimum 3-night stay, the class starts after breakfast.

First you'll visit the local baker at the community oven where the locals bake their bread and cakes.


Then on to the souks to buy all the ingredients for your lunch.


Back at the riad, you'll learn to make a delicious tagine, one that you can easily recreate back home!


The class is over at lunchtime, when you get to eat everything you made!
